 Concept of Blast freezers/Coolers:   The importance of blast freezer/cooler is to freeze/cool the food produce rapidly in order to bypass the crystallization of water molecules in food. For instance, if we’re freezing slowly fish from its initial freezing temperature to desired storage temperature there will be ice crystals formation over the period of time and leads to disruptions in the texture and quality. To overcome this circumstances , meat products are usually cooled rapidly using high velocity and very low temperature air . Usually 12-14 m/s and air at minus 22 to 30 deg.Celsius based on the storage conditions. NB: Design parameters may get alter based on the applications.
